Culinary philosophy

We offer no set menus at Nay Palad Hideaway. Instead, our resident chef, Marc Silvestre, combines the freshest of fish, meat and produce in an eclectic mix of East and West, modern and traditional, artistry and ease, that’s in perfect keeping with the spirit of barefoot luxury. Feel free to discuss with Marc any special dietary needs or culinary preferences that you may have.

Exploring with the Chef

Our chef welcomes you to join him for an early-morning visit to the market. Meet local fishermen, watch them haul in their catch, and learn how our chef plans and prepares your daily meals. To complete your full immersion in our chef’s routine, you can also accompany him to our organic herbs garden, located behind the Hideaway.

Cooking lessons

Our kitchen is your kitchen. Join Chef Marc Silvestre for one of his interactive cooking demonstrations, or simply drop by with that glistening snapper you’ve caught. From filleting to grilling to garnishing with imagination, Marc is passionate about helping others—including children—to develop artistry in the kitchen.
